Freezer Cooking

Do any of you do freezer cooking? My friend and I did a huge batch a couple weeks before I had Riley. It was awesome! I had 10 meals in the freezer that all I had to do was pull out and put in the crockpot. Friday afternoon I had the opportunity to do some more freezer cooking. I used 3 recipes and doubled them. Below are the recipes I used.

OOTD

Gotta love the bathroom photos ;) I absolutely love this Target dress. So comfy. Also, I found these sandals over the weekend. My solution to "cute sandals that aren't flip flops to wear to work".

Dresses

Since Riley has arrived, I've found it hard to get out and go shopping. If I do happen to make it out to a store, it's usually with my husband for a date night and he's not the most patient person in the world when I'm trying on clothes ;)

So, my solution was to order a ton of dresses from Target online. That way I can try them on at home and then send back what didn't work. Above are the adorable dresses I ended up with. How cute are they?!

Meal planning

I've found a new system for meal planning and I'm so excited about it! I really think it's going to save me time and brain power. I came across these awesome meal plan sheets on Money Saving Mom . I then sat down with my cookbooks and picked out my favorite meals, plugged them into the meal plans and created a shopping list for the week to the right. My mom laminated them for me so they would keep better. Now every week I'll just rotate from sheet to sheet. I'll take a look at the shopping list on the right, double check with what I already have at home and then go grocery shopping.

I've shared one of my favorite meals below: Chicken Parmesan. It's super easy and tasty! I make it a lot for Sunday dinner.

Chicken Parmesan

·                  4 boneless chicken breasts, pounded to 1/2 inch thickness
·                  1 egg
·                  1/2 cup milk
·                  seasoned bread crumbs
·                  2 to 3 tablespoons olive oil
·                  8 slices mozzarella cheese, or more
·                  1 jar <16 oz> spaghetti sauce
·                  Parmesan cheese

Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Riley is 7 months

I've been slacking big time with blogging. Work has been super busy plus I've been working extra hours to make up time. I'm sensing that we're getting ready to settle into a more relaxed summer routine though. I'm ready for it!

Anyways, at the end of last month Riley turned 7 months :) I can't believe it. He's closer to being a year old than he is to being a newborn. Craziness!

Has 2 teeth!
Sleeps from 7:30 pm - 6:00 am
Eating solids (loves bananas)
Almost crawling...rocks back & forth on his hands & knees
Loves to be outside
He's such a happy baby

Riley at 5 Months

My little baby just turned 5 months last week. It's hard to believe!!!

Is always smiling!
Loves his elephant with the crinkly ears
Sleeps 8-10 hours straight
Loves when I sing songs to him
Eats rice cereal before bed (and he likes it now! Hallelujah)
Is rolling over like crazy, both ways

Meal planning

Getting organized as much as possible on Sunday evenings sets my tone for the whole week. Does anybody else agree? If I don't plan ahead for the week, it tends to be a rough one. Sundays I like to pick up the house, set out Riley's clothes for daycare, plan my menu, shower, pack my lunch etc.

Below is our menu for last week. As you can tell, I rely heavily on my crockpot!

Monday:

Parmesan Honey Roast (I tossed in potatoes and carrots. Add applesauce on the side and                          you've got a whole meal there!)

Tuesday:        Leftovers
                     Rhodes rolls

Wednesday:

                     Slow Cooker Salsa Chicken
Chips & Salsa ( my family makes the best salsa. I shared the recipe below):

Salsa:
2 cans of Rotel
1 bunch of Cilantro
Juice of one lime
1 tsp of garlic
1/3 of an onion
Salt and pepper to taste

Dump first four ingredients in blender. Blend, then chop a medium onion into thirds. Put 1/3 of the onion into the blender and pulse 3 times. Add salt and pepper to taste.

Trust me, best salsa ever!

Thursday: Leftovers

Friday: Pizza night!!!

Both recipes are from Pinterest and they were amazing! I highly recommend them.

High Five for Friday

Happy Friday everyone! Linking up to Lauren Elizabeth for High Five for Friday.

1. I bought this beautiful rug this week for our entryway from the garage. RugsUSA.com was having a President's Day sale where many of their rugs were 70% off!!! Plus they have free shipping. I can't wait to get it.

2. I had to share an adorable picture of my Riley. He's all happy at daycare :)

3. I made this Pioneer Woman recipe this week: Bowtie Chicken Alfredo. Mmm mmm mmm. I love pasta dishes with white wine and cream and this one did not disappoint.

4. How cute is this tote bag?! I also bought it this week. It's a 31 bag. Perfect to toss all of my stuff in that I carry back and forth from work.

5. The weather this week has been sunny and warmer. What a relief. The snow gets a little depressing.

Happy Valentine's Day

Happy Valentine's Day from Riley :)

I got the idea for this photo from Crafty Chelsea. She did it with her cute, little guy. Turned out sweet, didn't it?! I hope you all have a wonderful day!!

Long time, no see

Well it has been a long time since I've posted on here. I didn't realize it had been since July!!! A lot has certainly taken place since then. On October 21st I gave birth to my perfect little boy Riley Robert. Of course I have pictures to share ;)

My sister in law got me these cute onesies to take his picture in every month. It's amazing how much he's grown in three months!

Motherhood and working full-time has knocked me on my butt, so we'll see how well I can keep up on here. I miss doing the blog so I'm hoping I can work it into my daily juggling act :)
