Freezer Cooking

Do any of you do freezer cooking? My friend and I did a huge batch a couple weeks before I had Riley. It was awesome! I had 10 meals in the freezer that all I had to do was pull out and put in the crockpot. Friday afternoon I had the opportunity to do some more freezer cooking. I used 3 recipes and doubled them. Below are the recipes I used.

OOTD

Gotta love the bathroom photos ;) I absolutely love this Target dress. So comfy. Also, I found these sandals over the weekend. My solution to "cute sandals that aren't flip flops to wear to work".

Dresses

Since Riley has arrived, I've found it hard to get out and go shopping. If I do happen to make it out to a store, it's usually with my husband for a date night and he's not the most patient person in the world when I'm trying on clothes ;)

So, my solution was to order a ton of dresses from Target online. That way I can try them on at home and then send back what didn't work. Above are the adorable dresses I ended up with. How cute are they?!

Meal planning

I've found a new system for meal planning and I'm so excited about it! I really think it's going to save me time and brain power. I came across these awesome meal plan sheets on Money Saving Mom . I then sat down with my cookbooks and picked out my favorite meals, plugged them into the meal plans and created a shopping list for the week to the right. My mom laminated them for me so they would keep better. Now every week I'll just rotate from sheet to sheet. I'll take a look at the shopping list on the right, double check with what I already have at home and then go grocery shopping.

I've shared one of my favorite meals below: Chicken Parmesan. It's super easy and tasty! I make it a lot for Sunday dinner.

Chicken Parmesan

·                  4 boneless chicken breasts, pounded to 1/2 inch thickness
·                  1 egg
·                  1/2 cup milk
·                  seasoned bread crumbs
·                  2 to 3 tablespoons olive oil
·                  8 slices mozzarella cheese, or more
·                  1 jar <16 oz> spaghetti sauce
·                  Parmesan cheese

Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Riley is 7 months

I've been slacking big time with blogging. Work has been super busy plus I've been working extra hours to make up time. I'm sensing that we're getting ready to settle into a more relaxed summer routine though. I'm ready for it!

Anyways, at the end of last month Riley turned 7 months :) I can't believe it. He's closer to being a year old than he is to being a newborn. Craziness!

Has 2 teeth!
Sleeps from 7:30 pm - 6:00 am
Eating solids (loves bananas)
Almost crawling...rocks back & forth on his hands & knees
Loves to be outside
He's such a happy baby
